Very important for Rory and Lorelai, they mention it twice...
In Ballrooms and Biscotti, Richard asks if they visited any of their friends while in Europe and Rory answers “Jim Morrison says hello.”
In French Twist, Christopher says “It's not like we're being obnoxious and asking someone to take a picture of us in front of Jim Morrison's grave.” Lorelai answers: “Which, by the way, I promised Rory we would do.”
Harry’s bar
“First we have to go to Harry's bar and smoke gauloises cigarettes and get in a fight about cubism and gesticulate wildly!”
This could be a reference to Funny Face, the movie. Watching it before your trip might be fun!

Where Lorelai and Christopher have their fancy dinner, in the morning, with a view of the Eiffel tower.
The real restaurant looks nothing like the one in the show, so they probably just borrowed the name, but why not go anyway and say you ate at L’Arpège like Lorelai!
